Jay's Sharpening Service

Wouldn't consider using anyone else

I have a set of Global kitchen knives and a separate Kitchen Aid chef's knife. I have been sharpening them with a Spyderco set of sharpening sticks. After about 10 years (yes! I know, not too smart) they would no longer would take an edge. I went looking for a professional knife sharpening service in Las Vegas, where there are a lot of chefs. I know "most" professional chefs have their knives sharpened regularly by a sharpening service as it re-sets the edge and allows them to be razor sharp with a honing. After checking with as many sources as I could find, I came up with Jay's. Jay's in an industrial part of town, they are a little hard to find, but wow, were they great! $3 per knife is a terrific bargain, they also refinish cutting boards and sell only the best quality knifes, including Global, Shun, Miyabi, Dexter, and all the famous German brands (nice, but not as good as the Japanese). They sharpened my knives in a couple of hours, called me when they were done and were very pleasant and professional. I highly recommend them. Too bad they are a ways from where I live. It was worth the drive. I think I might buy a Shun or Dexter 10" chef's knife from them. They are amazing.
